Egg Cupcakes
Using a normal cupcake pan you will need:
12 slices of bread (with the crusts cut off and slightly flatten with a rolling pin)
12 pieces of pre-cooked bacon cut in half. Do not finish cooking it.
1/4 stick of melted butter
Salt and pepper
Melt 1/4 stick of butter and brush one side of bread with butter.
Place the buttered side of bread down into the cupcake holder and press to form a cup. If the bread breaks just smoosh it together.
Criss-cross 2 pieces of bacon in each bread cup.
Crack one egg into each bread cup.
Salt and pepper.
Bake at 375 for 14-15 minutes. Longer will cook the yolk harder and less cooking time with make the yolk running. The Fish Heads likes to eat their egg cupcakes with their hands just like a cupcake!
Here's my nephew Joey. Every night when he spends the night with us when we have family prayer he'll ALWAYS pray for a really good breakfast. It is the sweetest little thing. So of course - Uncle Devin ALWAYS makes sure there will be a REALLY GOOD breakfast for Joey in the morning!
