Egg Cupcakes

Using a normal cupcake pan you will need:

12 slices of bread (with the crusts cut off and slightly flatten with a rolling pin)
12 pieces of pre-cooked bacon cut in half. Do not finish cooking it.
1/4 stick of melted butter
Salt and pepper

Melt 1/4 stick of butter and brush one side of bread with butter.

Place the buttered side of bread down into the cupcake holder and press to form a cup. If the bread breaks just smoosh it together.

Criss-cross 2 pieces of bacon in each bread cup.

Crack one egg into each bread cup.

Salt and pepper.

Bake at 375 for 14-15 minutes. Longer will cook the yolk harder and less cooking time with make the yolk running. The Fish Heads likes to eat their egg cupcakes with their hands just like a cupcake!

Here's my nephew Joey. Every night when he spends the night with us when we have family prayer he'll ALWAYS pray for a really good breakfast. It is the sweetest little thing. So of course - Uncle Devin ALWAYS makes sure there will be a REALLY GOOD breakfast for Joey in the morning!

Breakfast in bed

My kids love to surprise Devin and I with breakfast in bed! Wish I would have taken pictures of all these special mornings and the notes they write and tape to the inside of our bedroom door - ensuring once we awake for us not to leave the bedroom.

Dad's Scones

My Dad makes his own bread dough for his scones. You can however use Rhodes frozen bread loaves (comes 3 to a package).

Our favorite way to eat his scones is with his homemade syrup and powder sugar. How do you made his syrup? Good question - he doesn't measure it and makes it one small batch at a time in a large mug.

Melt in microwave:
butter
brown sugar
and a little water

Crepes

This is Jake's FAVORITE thing!!! Homemade crepes! We like to fill them with Nutella, sliced bananas and strawberries and whip cream. Or Emily likes them with butter and cinnamon sugar. If you don't have fresh fruit on hand I'll use a can of raspberry pie filling with Nutella and whip cream.

1 cup flour
2 beaten eggs
1/4 tsp salt
1/2 cup milk
1/2 cup water
2 TBS melted butter

Mix together in a mixture or with a wire whisk. You can do it ahead of time and leave in refrigerator.

Judy's Oven Omelet

When I make crepes - I make this too. It helps fill up my hungry Fish Heads. In the morning I make the crepe batter and mix up this egg recipe. Then when dinner time approaches - I just have to stick the eggs in the oven and start cooking crepes.

Preheat oven 325 degrees.

MELT 1/4 cup of butter in 9x13 pan in oven (you can use half that amount of butter)

BEAT 9 large eggs

ADD:
1 cup milk
1 cup sour cream
1 tsp salt
1/4 cup chopped chives (optional)

Pour into dish, bake for 35 minutes till eggs are done but still moist. Immediately after you take the eggs out of the oven, I add approximately a 1/2 cup of shredded cheese to the top. Serve with salsa. Next time, Tyler wants me to add cooked bacon to the eggs before we bake it (sounds like a good idea to me).

You can make the mixture the night before and keep it in the refrigerator overnight. Then all you have to do is melt the butter and bake the eggs in the morning.

Judy's Melt-in-your-mouth Pancakes

2 cups Bisquick
2 tsp baking powder
1 TBS sugar
2 TBS lemon juice
2 eggs
1 cup milk

Grandma England's Hash

Grind left over roast and one white onion.

Simmer these two ingredients together for a few minutes to cook onion.

Add left over mashed potatoes and gravy.

Devin likes to serve this for breakfast; topping each serving of hash with a fried egg.
